Tagline said "Serverless video processing", which stopped being true when image generation shipped. Three of the nine live job types generate images rather than transform video. Also removes two em-dashes, banned site-wide by writing-style.md.
This file required an em-dash in the package description and named the ASCII hyphen as the error. Apex writing-style.md bans the em-dash site-wide as an AI-aesthetic tell, and apex brand-consistency.md names the exact string this file blessed as its canonical BAD example. The two rulebooks contradicted each other, which is why the em-dash survived in package.json until today. Fixing the string without fixing the rule would just let the next agent put it back.

Coordinated with rendobar/rendobar#472.
The "What is Rendobar?" section had the same problem and is updated to match.
Also removes two em-dashes, which
writing-style.mdbans site-wide. README count is now 0.
